Starting in
milan

Our story begins with a teenage Matteo learning to make pizzas in his uncle’s pizzeria in Milan, just outside his hometown of Bergamo. Fast forward 15 years, he finds himself in Oxford, where he meets Nick and begins recreating his family recipes as a chef in the White Rabbit Pub. Having had the idea, the two friends embark on a road trip back to Bergamo to meet Teo’s family and source the finest ingredients for their first range of gluten-free pizzas. Now we don’t just make pizza, Teo loves creating gluten-free versions of Italian classics such as Focaccine, Pasta, Desserts and much more!

OUR BESPOKE BAKERY

We built our Oxfordshire bakery from scratch because no one could make Matteo’s product the way he wanted it. Every single part of our operation, from our custom-made equipment to our unique processes, has been designed specifically with our artisanal gluten-free recipes in mind. 

BETTER FOR YOU, AND FOR THE PLANET

We do our absolute best to run a sustainable business that gives back to its community wherever possible. Our production line uses 100% green energy & we partner with multiple food banks to donate stock as often as we can. We also pay our team of rabbits the national living wage. There is always more we can be doing, and this is only the beginning!
